Description

A fast and easy skillet dinner with chicken. The green peppers, yellow corn, red pimientos and bright spinach make it look like a little party in your pan!


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 small onion, thinly sliced
  • 1 small green pepper, cored and diced
  • 1 cup frozen sweet corn
  • 1 cup chopped spinach
  • Pinch of salt and pepper
  • 2 heaping cups of cooked, chopped chicken (such as rotisserie)
  • 2 Tbsp jarred pimiento
  • 1/2 package Boursin Garlic and Herb Cheese (75 grams)

Instructions

  1. Heat a skillet over medium high heat. Add in the oil and swirl around. Add in the onions and peppers and sauté for about 5 minutes, or until onion is soft and translucent.
  2. Stir in the corn, spinach, salt and pepper and heat through. 
  3. Stir in the chicken, pimientos and Boursin and heat through.
  4. Serve and enjoy!
