Description
A fast and easy skillet dinner with chicken. The green peppers, yellow corn, red pimientos and bright spinach make it look like a little party in your pan!
Ingredients

- 1 Tbsp olive oil
- 1 small onion, thinly sliced
- 1 small green pepper, cored and diced
- 1 cup frozen sweet corn
- 1 cup chopped spinach
- Pinch of salt and pepper
- 2 heaping cups of cooked, chopped chicken (such as rotisserie)
- 2 Tbsp jarred pimiento
- 1/2 package Boursin Garlic and Herb Cheese (75 grams)
Instructions
- Heat a skillet over medium high heat. Add in the oil and swirl around. Add in the onions and peppers and sauté for about 5 minutes, or until onion is soft and translucent.
- Stir in the corn, spinach, salt and pepper and heat through.
- Stir in the chicken, pimientos and Boursin and heat through.
- Serve and enjoy!
