Description

Clean me out soup is an Instant Pot or Crockpot recipe for a delicious and nutritious soup that makes you feel so good!


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 onion, finely diced
  • 5 ribs of celery, finely diced
  • 1 Tbsp minced garlic
  • 8 cups chicken bone broth
  • 5 medium carrots, peeled and cut into chunks
  • 1 1/2 inch chunk of ginger, grated
  • 1 tsp ground turmeric powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp lemon juice
  • 2 cup chopped, cooked chicken (optional)
  • 2 cups chopped spinach

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onion and celery and saute for 4 minutes. Add in garlic and saute for 30 seconds. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Add in the carrots, ginger, turmeric, salt, pepper, lemon juice and chicken.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 10 minutes. When time is up move valve to venting and remove the lid.
  5. Stir in the spinach.
  6. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and swirl it around. Add in the onion and celery and saute for 4 minutes. Add in garlic and saute for 30 seconds. Transfer to slow cooker.
  2. Add in the broth, carrots, ginger, turmeric, salt, pepper, lemon juice and chicken.
  3. Cover and cook on low for 6 hours or on high for 3-4 hours.
  4. Stir in the spinach.
  5. Ladle into bowls and serve.
