Description

An easy Instant Pot pasta dinner with seasoned ground beef, tender pasta shells, creamy cheese and pizza sauce for a meal that’s ready in about 30 minutes.


Ingredients

Scale
  • 8 oz lean ground beef
  • 1/2 cup finely diced onion
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1 tsp dried parsley
  • 2 cups beef broth
  • 8 oz medium pasta shells
  • 1/3 cup sour cream
  • 1/3 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 (14 oz) jar pizza sauce

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, Italian seasoning and parsley. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the pasta and gently press to submerge in the broth. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure to 4 minutes. When time is up let pot sit for 5 minutes. Move valve to venting and remove the lid.
  5. Stir in the sour cream, cottage cheese and mozzarella until incorporated and melted. 
  6. Scoop into bowls and top each serving with a scoop of pizza sauce. Alternately, you can stir the pizza sauce straight into the pasta in the Instant Pot.
