Classic Amish Hamburger Casserole–an easy Instant Pot pasta dinner with seasoned ground beef, tender pasta shells, creamy cheese and pizza sauce for a meal that’s ready in about 30 minutes.

Classic Amish Hamburger Casserole
This easy Instant Pot recipe is an adaptation of an Amish Hamburger and Noodle Casserole on Amish 365. The pasta and beef are cooked in the Instant Pot and then a creamy sauce of sour cream, cottage cheese and mozzarella are stirred in. Pizza sauce is added after the pressure cooking time is up to keep it tasting bright and fresh. This was one I kept sneaking bites of! My family ate it all up. You can easily double this recipe to feed 6-8 people. Enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey or Italian sausage
- Onion–or shallot
- Kosher salt
- Black pepper
- Garlic powder
- Italian seasoning
- Dried parsley
- Beef broth–or chicken broth
- Medium pasta shells–or rotini, cavatappi or penne
- Sour cream
- Cottage cheese–or ricotta cheese
- Shredded mozzarella cheese–or an Italian cheese blend
- Pizza sauce–or your favorite marinara sauce
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, Italian seasoning and parsley.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the pasta and gently press to submerge in the broth.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure to 4 minutes. When time is up let pot sit for 5 minutes. Move valve to venting and remove the lid.

Stir in the sour cream, cottage cheese and mozzarella until incorporated and melted.

Scoop into bowls and top each serving with a scoop of pizza sauce.

Notes/Tips
- Serve with green salad and breadsticks.
- Pepperoni lovers can sprinkle chopped pepperoni over each serving or stir it in after pressure cooking.
- Fresh basil or a sprinkle of Parmesan cheese makes a great finishing touch.
- I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for 3-4 days. You can freeze leftovers for up to 2 months.
