So you’ve got some shopping to do? Before you face the traffic and the crowds and the lines make sure to fuel up. This breakfast casserole can be made in your Instant Pot, Crockpot or oven and will keep you full for a long time! With eggs, sausage, cheese and hashbrowns it’s a hearty and delicious breakfast! Sometimes we like to eat this on our breakfast for dinner night.

Christmas Shopping Casserole

Are you one of those people that loves to shop or hates to shop? I am definitely someone who hates to shop. I can do the online shopping just fine but in-person shopping is not my favorite way to pass time. It’s torturous at times. I decided that there are a few reasons for this. One is usually I am holding a large purse and it’s heavy to lug around all day. Second, I am usually wearing a coat and then have to take it off when I get into the warm store and have to lug it around all day. Third, I’m usually under-fueled and that means I get hangry. Well I decided that I can at least thoroughly control the third reason I don’t like shopping. Making sure to get fueled up with a good breakfast will make a big difference.

This is an easy breakfast casserole with just 5 main ingredients! It’s eggs, sausage and hashbrowns all in one dish. You can get creative if you want and swap out the sausage for turkey sausage or even bacon. Try using cauliflower rice in the place of hashbrowns for a lower carb option. Use whatever kind of cheese you like best…cheddar, pepper jack, colby are all good options. For extra nutrition, add in a few handfuls of chopped spinach after you add in the hashbrowns. It’s up to you! Plus you can cook this recipe in any way you like…crockpot, Instant Pot or oven! Happy shopping 😏

Notes/Tips

  • Serve with salsa, pico de gallo or ketchup.
  • I used my 6 quart Instant Pot*. You can also make an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.
  • This recipe is gluten-free.
  • To make this low carb use two cups of cauliflower rice in the place of the hashbrowns.

Description

This breakfast casserole can be made in your Instant Pot, Crockpot or oven and will keep you full for a long time! With eggs, sausage, cheese and hashbrowns it’s a hearty and delicious breakfast! 


Ingredients

Scale
  • 2 cups thawed hashbrowns
  • 1 pound ground sausage, browned and drained of excess grease
  • 6 eggs
  • 1/2 cup half and half
  • 1 cup shredded cheddar cheese
  • Salt and pepper
  • Salsa, for serving

Instructions

Instant Pot Instructions:

  1. In a bowl whisk together the eggs and the half half. Add in 1/2 tsp salt and 1/4 tsp pepper.
  2. Spray an oven safe dish that fits inside your Instant Pot with non-stick cooking spray. Layer the hashbrowns in the bottom of the pan. Lightly salt and pepper the hashbrowns. Then layer on the sausage, cheese and finally the egg mixture. 
  3. Pour 1 ½ cups water into bottom of Instant Pot. Cover your dish with foil and place the dish on a sling/trivet. Lower the dish into the Instant Pot. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 30 minutes. Move valve to venting and remove the lid. 
  5. Remove the pan and the foil. Cut the casserole and serve. Top with a tablespoon of salsa. 

Crockpot Instructions:

  1. In a bowl whisk together the eggs and the half and half. Add in 1/2 tsp salt and 1/4 tsp pepper. Set aside.
  2. Spray you slow cooker with non-stick cooking spray. Layer the hashbrowns in the bottom. Lightly salt and pepper the hashbrowns. Then layer on the sausage, cheese and finally the egg mixture. 
  3. Cover and cook on high for 2-3 hours or on low for 4-6 hours. The cooking time in this recipe will vary widely depending on what size of slow cooker you use and how hot it cooks. The larger the slow cooker the quicker the eggs will cook.

Oven Instructions:

  1. In a bowl whisk together the eggs and the half and half. Add in 1/2 tsp salt and 1/4 tsp pepper. Set aside.
  2. Spray a 9×9 inch baking dish with non-stick cooking spray. Layer the hashbrowns in the bottom. Lightly salt and pepper the hashbrowns. Then layer on the sausage, cheese and finally the egg mixture. 
  3. Bake at 350 for 45 minutes, or until eggs are set.
  4. Cut the casserole and serve topped with salsa.

    This was excellent. Very similar to a Christmas casserole I bake every Christmas morning, but your recipe is so much faster/easier, I used Hot sausage to give it an extra kick.
