Description

A chicken, bacon and potato casserole with sweet and tangy Chick-fil-A sauce made in your Instant Pot. 


Ingredients

Scale
  • 1 1/4 pounds potatoes, peeled and cubed
  • 4 ounces cream cheese
  • 2 Tbsp milk
  • 2 cups chopped, cooked chicken
  • 1/3 cup chick-fil-a sauce
  • 1/3 cup bacon crumbles (or 3 pieces of bacon chopped and cooked until crispy)
  • 2 green onions, sliced
  • 1/2 cup shredded cheddar

Instructions

  1. Pour 1 ½ cups of water into bottom of Instant Pot. Add cubed potatoes into steamer basket. Drop the basket into the bottom of the Instant Pot. Add cream cheese on top of the potatoes. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up release the pressure and remove the lid. Remove the steamer basket from the Instant Pot and discard the water. 
  3. Use a spoon to move the cream cheese into the Instant Pot. Turn Instant Pot to saute setting (less). Stir in the milk and chick-fil-a sauce in with the cream cheese to make a sauce. Stir the chicken into the sauce and warm through. 
  4. Gently stir the potatoes in with the sauce.
  5. Sprinkle the cheese, green onions and bacon on top. Use an air fryer lid to melt the cheese (I did 2 minutes at 400 degrees). 
  6. Serve and enjoy!

Notes

If you don’t have an air fryer lid go through step 4 and then scrape the mixture into a 9×9 inch pan, sprinkle the cheese, green onions and bacon on top and bake at 350 for 10 minutes.
