One Skillet Cheesy Salsa Rice (+KitchenAid® giveaway)

We all have those recipes in our repertoire that we pull out of our sleeve when we haven’t planned anything else for dinner.  Ours is affectionately known as “salsa rice.”  We have been making it for years now. Basically, it’s awesome.  It takes just minutes to make so it’s perfect for a busy weeknight. The bonus is that it is all made in one pan, and everyone loves it.  It’s cheesy and has awesome flavors thanks to salsa and sausage.

In the past, we’ve always just used bottled salsa but for today’s recipe I’m including a recipe for homemade blender salsa.  It’s totally up to you though.  If you don’t have a lot of time then just use what you have in the pantry.  If you want to make this recipe stretch, then you can add a can of drained black or pinto beans.

We always use Minute® 100% Whole Grain Brown Rice for our salsa rice.  It’s
awesome because you get all the nutrition of regular brown rice except it only
takes 10 minutes to make (as opposed to 40 minutes–ain’t nobody got time for
that).  We actually always have Minute
® Brown Rice in our pantry for other
recipes as well.  It’s just what we use.  I don’t really have the
patience to cook rice for 40 minutes (unless I make it in my slow cooker).  I noticed from the Minute Rice website that they have a somewhat new product called Minute
® Multi-Grain Medley.  It’s a blend of four gluten-free grains–brown rice, Thai red rice, wild rice and quinoa.  And like their other products it cooks quickly in just 10 minutes.  I’m totally going to have to try this new product!  I love whole grains but I don’t love how long they take to cook traditionally so this is going to be perfect for me.

Made in about 30 minutes this one skillet meal is ideal for any night of the week
To make our family’s salsa rice, the first thing you’ll do is brown sausage in your large skillet over medium high heat.  I like to get my sausage browned really well.  I like some crispy pieces in there!  I always try to wear an apron when cooking sausage so the grease doesn’t pop and sizzle all over my clothes.

After the sausage is browned, you’ll drain off as much grease as possible.  Then you’ll add in the Minute® Brown Rice, water, and the salsa.  You’ll bring the liquids to a simmer, then cover and let cook over low heat for about 18 minutes.  How easy is that?!
You’ll add some cheddar and let it melt for a minute, then I like to add crunched up tortilla chips and diced avocados on top.  You could also drop a dollop of sour cream on the top of each serving but it’s pretty creamy and delicious as is.

Ingredients

Scale
  • 12 oz ground sausage
  • 1 1/2 cups Minute® Brown Rice
  • 2 cups water
  • 2 1/2 cups salsa (homemade* or jarred salsa)
  • 1 cup shredded cheddar (I like medium or sharp)
  • 1 avocado, diced
  • 2 cups tortilla chips, crunched up
*Blender Salsa Recipe:
Makes about 2 1/2 cups salsa
  • 1 lb roma tomatoes
  • 1/3 cup diced white onions
  • 1 tsp minced garlic
  • 1 1/2 tsp lime juice
  • 1/2 diced jalapeno
  • 1/3 cup cilantro leaves and stems
  • 1 1/2 tsp kosher salt
  • 1/2 tsp pepper

Instructions

  1. In a skillet over medium high heat, brown the sausage well.  Drain off any grease.
  2. Add in the rice, water and salsa. Bring to a simmer.  Once it’s simmering, reduce the heat to low-medium.  Cover the pan and cook for 18 minutes.
  3. Remove the lid, stir a bit. Sprinkle with cheese and cover for about 1 minute or until cheese gets melty.
  4. Sprinkle the diced avocados and crunched up chips over the top.  Serve immediately.  Serve with a dollop of sour cream, if desired.

Blender Salsa:

  1. Combine all ingredients in blender or food processor and pulse until it gets to the desired consistency.

    My college age kids have always loved minute rice. Some have preferred the white and others the brown!

    My husband loves the microwaveable cups/bowls because they're quick and super easy for work. As for me, I'm a huge fan of those and the brown rice. White rice is nice, but the brown just has a nicer texture and flavor to me! 🙂

    Brown Rice almost exclusively. I may love rice, but I do not, or cannot stand the interminable wait, until I pop it into my mouth. One of my favorites is stuffed bell peppers. Well, they would take forever if not for Minute Rice. Oh, I can taste one now. Only problem, I am on holiday, and in a Motel so have to wait to get home. Oh the pain. We have to settle for a meal cooked out.

    I have not ever tried Minute Rice. I'm from Hawaii and have always owned a rice cooker (=EASY) but the idea of making brown rice in 10 minutes is very appealing!
