April Fool’s “Sundae”

Happy April Fool’s Day! I love little silly days like today. There are no or low expectations but just a bit of whimsy to make it more fun than a normal day. If you’d like to please your family members serve them up some ice cream sundaes for dinner tonight. Oh, not real ice cream sundaes but these meat and potato sundaes.

You can make the chicken and the mashed potatoes together in your Instant Pot using the pot-in-pot method. If you don’t have ice cream sundae glasses just find a normal glass and layer in the ingredients. Don’t forget the cherry (tomato) on top to finish off the dish! My kids thought these were super fun especially Skyler since he’s on a self-imposed no sugar challenge. He loved the idea of ice cream sundaes for dinner without breaking his promise to himself.

How to make April Fool’s Meat and Potato Sundaes

Cook up some chicken in the Instant Pot. Shred it and stir in some barbecue sauce.

You can cook some potatoes in the Instant Pot along with the chicken. Or you can use leftover mashed potatoes or instant mashed potatoes.

Assemble the sundaes and don’t forget the cherry on top!

Description

Instant Pot April Fool’s “Sundae” is a bbq chicken and mashed potato sundae that is perfect for an April Fool’s Day meal. Kids and adults will be delighted by this whimsical dinner!


Ingredients

Scale
  • 1 cup chicken broth
  • 2 chicken breast halves (about 1 1/2 pounds, fresh or frozen)
  • Salt and pepper
  • 1 1/2 pounds potatoes, peeled and cubed
  • 1/3 cup milk
  • 3/4 tsp kosher salt
  • 2 Tbsp butter
  • 1/2 cup BBQ sauce or gravy
  • 4 cherry tomatoes

Instructions

  1. Pour broth into Instant Pot. Add chicken into pot. Salt and pepper the chicken.
  2. Place a trivet* on top of the chicken. Add potatoes into a pot-in-pot dish* and cover with water. Place the potato dish on top of the trivet. 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes for fresh chicken or 12 minutes for frozen chicken. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  4. Carefully remove the potato pan. Drain off liquid. Pour the potatoes into a mixing bowl. Mash* the potatoes well. Stir in the milk, kosher salt, and butter. Set aside.
  5. Place chicken on a cutting board and shred or chop. In a bowl, stir the chicken together with BBQ sauce or gravy. 
  6. To assemble the sundaes: In a ice cream sundae glass* layer ½ cup of shredded meat and ½ cup of potatoes twice and top with a cherry tomato!

Notes

You can also use instant mashed potatoes. You’ll need about 4 cups of hot mashed potatoes.

To make this gluten-free use a gluten-free BBQ sauce or gravy.
