Description

Amish Wedding Roast is typically served at Amish weddings in Lancaster County, Pennsylvania. It is roasted chicken or turkey served together with homemade stuffing. This version is made using your Instant Pot on the saute and slow cooker settings.


Ingredients

  • 8 slices white bread
  • ½ cup butter
  • 1 shallot, diced
  • 1 cup finely diced celery
  • 1 ½ tsp salt
  • ½ tsp pepper
  • 1 tsp parsley flakes
  • 3 cups cooked, chopped chicken (I used rotisserie chicken)
  • 1 egg
  • ¼ cup milk

Notes

  1. Cut the slices of bread into cubes. Place the cubes on a baking sheet and toast them for 20 minutes at 350 degrees.
  2. Turn Instant Pot to saute setting. Add in the butter and let it melt. Add in the shallot, celery, salt, pepper and parsley. Saute for 5 minutes. Turn off Instant Pot.
  3. Fold in the toasted bread cubes and chicken to coat in the butter.
  4. In a small bowl whisk the egg and milk together. Stir it into the pot.
  5. Cover Instant Pot and secure the lid. Turn Instant Pot to slow cooker setting on “more”. Set the time to 1 hour and 30 minutes. When time is up serve and enjoy!
