Amish Washday Casserole–a good busy day casserole made in your Instant Pot. It is full of ground beef, spaghetti, potatoes, tomato sauce and cream of mushroom soup.

Amish Washday Casserole

Today’s recipe is an Instant Pot adaptation of Amish Washday Casserole on Amish 365. The author explains that washday for Amish literally takes all day since they have large families and typically don’t use electric washers and dryers. They’ll make a casserole like this one in the oven that doesn’t take a lot of time or energy to put together. Although I use an electric washer and dryer I still like to keep my meals as easy as possible with the use of the Instant Pot! This has a seemingly random array of ingredients and it’s carb loaded with pasta and potatoes but everyone thought it was great.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion
  • Celery
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Chicken broth–or water and Better than Bouillon chicken base, tomato juice
  • Spaghetti–or another short cut pasta
  • Russet potatoes–or red, yukon gold
  • Tomato sauce
  • Cream of mushroom soup–or cream of chicken

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and celery. Brown for about 5 minutes. Drain off excess grease. Stir in ½ tsp of the salt, pepper and garlic powder. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Break the spaghetti in half and lay it in a criss cross pattern in the pot. Add in the potatoes. Sprinkle the potatoes with the other ½ tsp of salt.

Add the tomato sauce and cream of mushroom soup on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes. Move valve to venting and remove the lid. 

Stir well. If desired you can add in some cheese and bacon. Serve and enjoy!

Notes/Tips

  • Serve with a green salad or raw veggies and dip.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A good busy day casserole made in your Instant Pot. It is full of ground beef, spaghetti, potatoes, tomato sauce and cream of mushroom soup. 


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 rib of celery, sliced
  • 1 tsp kosher salt, divided
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 1/2 cups chicken broth
  • 4 ounces spaghetti
  • 2 medium Russet potatoes, peeled and cut into cubes
  • 1 (8 oz) can tomato sauce
  • 1 (10.5 oz) can cream of mushroom soup

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and celery. Brown for about 5 minutes. Drain off excess grease. Stir in ½ tsp of the salt, pepper and garlic powder. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

    Is there a way to make this on the stovetop or in the oven?

      This dish began as a Casserole. I would saute the onions and celery. Set aside. Brown the beef, add salt and pepper add the onion and celery back to the beef. Then in a bowl,wisk tomato sauce,soup and garlic powder,maybe add some beef boulion 1/2 cup at time to desired thickness. Add cooked potatoes and cooked pasta 350 covered 30-45 mins.
