Description
A meat and potatoes Instant Pot or slow cooker dinner featuring ground beef, sliced russets, and vegetables, all simmered together in a creamy, savory sauce for an easy, family-friendly meal.

- 1 pound lean ground beef
- 1 cup diced onion
- 2 ribs of celery, diced
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 3/4 cup beef broth
- 2 pounds Russet potatoes, thinly sliced
- 2 carrots, peeled and cut into chunks
- 1 (10.5 oz) can cream of celery or cream of mushroom soup
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Layer in the potatoes and carrots and then spoon the soup over the top.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.
- Gently stir. Serve and enjoy!
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder. Add beef to slow cooker.
- Layer the potatoes and carrots over the top.
- In a bowl whisk together the broth and the cream soup. Pour it evenly over the top of the potatoes.
- Cover and cook on low for 3-5 hours.
