Description

A meat and potatoes Instant Pot or slow cooker dinner featuring ground beef, sliced russets, and vegetables, all simmered together in a creamy, savory sauce for an easy, family-friendly meal.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 ribs of celery, diced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 3/4 cup beef broth
  • 2 pounds Russet potatoes, thinly sliced
  • 2 carrots, peeled and cut into chunks
  • 1 (10.5 oz) can cream of celery or cream of mushroom soup

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Layer in the potatoes and carrots and then spoon the soup over the top.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.
  5. Gently stir. Serve and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper and garlic powder. Add beef to slow cooker. 
  2. Layer the potatoes and carrots over the top. 
  3. In a bowl whisk together the broth and the cream soup. Pour it evenly over the top of the potatoes.
  4. Cover and cook on low for 3-5 hours. 
  5. Serve and enjoy!
