Cheesy Chicken Hashbrown Casserole–cheesy chicken broccoli hash brown casserole is a creamy, baked dish made with rotisserie chicken, cubed hash browns and a savory sauce. It’s perfect for serving a crowd and prepping ahead.

Cheesy Chicken Hashbrown Casserole

This is a cross between funeral potatoes and chicken broccoli casserole and it was well received. Reagan’s friends came over and devoured it until the pan was scraped clean. It makes a heaping 9×13 inch pan so it’s perfect for big families or leftovers. This is a good one to prep ahead of time too for a busy day. Enjoy!

Ingredients/Substitution Ideas

  • Frozen cubed hash browns–or shredded hash browns
  • Frozen broccoli florets–or fresh broccoli florets
  • Cream of chicken soup–or cream of mushroom soup
  • Sour cream–or plain Greek yogurt
  • Milk–or half and half
  • Butter
  • Onion pulp–or finely diced onion
  • Garlic powder–or 1 Tbsp minced garlic
  • Kosher salt–or sea salt
  • Black pepper–or white pepper
  • Poultry seasoning–
  • Smoked paprika–or regular paprika
  • Shredded cheddar cheese–or Colby Jack cheese
  • Cooked, chopped chicken–I used rotisserie chicken. You could also use leftover turkey.

Steps

Heat oven to 350° F. Lightly grease a large baking dish (9×13 inch or larger).

Microwave the hash browns and broccoli for 2 minutes (not enough time to cook but enough time to get them a little less frozen).

In a large mixing bowl whisk together the cream of chicken soup, sour cream, milk, melted butter, onion pulp, garlic powder, salt, pepper, poultry seasoning and smoked paprika. Fold in the cheese, chicken, hash browns and broccoli until coated well. 

Spread the mixture into the pan. Cover with foil and bake for 45 minutes. Remove the foil and bake for 15 more minutes. 

Serve and enjoy!

Notes/Tips

  • This recipe makes a heaping 9×13 inch pan. You can bake it in a larger pan, if you’d like. You can also cut this recipe in half for a smaller group.
  • Serve with a fruit salad and dinner rolls.
  • Onion pulp adds moisture and a mild onion flavor. Make it by grating a fresh onion.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • To prep and freeze ahead of time: assemble before baking, cover tightly, and freeze up to 2 months. To bake from frozen, thaw overnight in the fridge and then bake as directed.

Ingredients

  • 1 (32 oz) bag frozen cubed hash browns
  • 1 (16 oz) bag frozen broccoli florets
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 Tbsp melted butter
  • 2 Tbsp onion pulp
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp poultry seasoning
  • 1/4 tsp smoked paprika
  • 2 cups shredded cheddar
  • 2 1/2 cups cooked, chopped chicken (rotisserie works well)
