Description

Cheesy chicken broccoli hash brown casserole is a creamy, baked dish made with rotisserie chicken, cubed hash browns and a savory sauce. It’s perfect for serving a crowd and prepping ahead.


Ingredients

  • 1 (32 oz) bag frozen cubed hash browns
  • 1 (16 oz) bag frozen broccoli florets
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 4 Tbsp melted butter
  • 2 Tbsp onion pulp
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp poultry seasoning
  • 1/4 tsp smoked paprika
  • 2 cups shredded cheddar
  • 2 1/2 cups cooked, chopped chicken (rotisserie works well)

Instructions

  1. Heat oven to 350° F. Lightly grease a large baking dish (9×13 inch or larger).
  2. Microwave the hash browns and broccoli for 2 minutes (not enough time to cook but enough time to get them a little less frozen).
  3. In a large mixing bowl whisk together the cream of chicken soup, sour cream, milk, melted butter, onion pulp, garlic powder, salt, pepper, poultry seasoning and smoked paprika. Fold in the cheese, chicken, hash browns and broccoli until coated well. 
  4. Spread the mixture into the pan. Cover with foil and bake for 45 minutes. Remove the foil and bake for 15 more minutes. 
  5. Serve and enjoy!
