1/2 cup Shirley J Universal Sauce
2 cups water
1 tsp Shirley J Pizza and Pasta Seasoning Mix
1/4 cup Parmesan cheese
1 1/2 cups salsa
7 oz penne pasta (I used whole wheat penne)
1 to 2 lbs uncooked boneless, skinless chicken breasts cut up into bite sized pieces (depending how meaty you like it)
Combine water, Universal Sauce and Pizza and Pasta Seasoning Mix in a skillet. Whisk together and bring to a slow boil over medium-low heat. Let simmer for 10 minutes. Stir in the salsa and Parmesan cheese. Place chicken in the slow cooker. Pour sauce over the top. Cover and cook on LOW for 4 hours. Cook pasta over stovetop until desired tenderness. Add pasta to slow cooker and stir. Serve topped with additional Parmesan cheese, if desired.
This is similar to the Zangy Chicken Penne but uses the Shirley J Universal Sauce instead of the fatty Alfredo sauce. It tasted great and everyone loved it. 4 stars. This is easy to do over the stovetop as well.
