Day 346: Vegetable Chicken Tortilla Soup

3 cooked and diced chicken breasts
1 cup chopped celery
1 cup diced carrots
1/2 red onion, diced
4 cups chicken broth
1 cup beef broth
1 tsp dried parsley
2 cans black beans, drained
2 cups frozen corn
1 can diced tomatoes
1 can diced green chilies
1 clove garlic, minced
1 tsp basil
1 tsp cumin
1 tsp chili powder

Add all ingredients into a large slow cooker. Cook on low for 8 hours. Serve with Frito's, cheese, and sour cream.

Surprisingly tasteless. The only redeeming factor was the cheese, corn chips, and sour cream. Try the creamy corn chowder instead. 2 stars
