Day 200: Pork Loin

This recipe is pretty simple, and can be adjusted to your tastes, but it really is a yummy treat. We started with a pork loin from Costco (they have ones for crockpots) line the crockpot with foil and put 1/2 of the spices/ingredients on the bottom and then pour the rest on top.

4 tablespoons of lemon juice
1 tablespoon of minced garlic
2 tablespoons of dehydrated onion (you can use an onion or onion powder, whatever you have on hand)
salt pepper
1 - 2 teaspoons of sage, basil, rosemary (whatever spice combo you really like)
1 large bullion cube (I usually use beef, but have used Chicken before)

Put 1/2 of the mixture on the bottom, then the pork loin, then the other 1/2 of the mixture, fold the foil over the pork loin. The key to this recipe it to make sure you have the right size crockpot, because it has to cook on low for a minimum of 6 hours on LOW to just fall apart and be yummy. I cooked two things in my large crockpot this time to not overcook the pork loin (I did pork ribs in the other 1/2 of the crock pot in foil as well). I did have to flip the pork loin over half way through, but I had enough time so I did not worry about losing the steam. We serve it with mashed potatoes, salad, green beans, gravy and this yummy raspberry chipotle sauce. If you like heat - the chipotle sauce is great, but you cannot get it in Utah. (we got ours from the Costco in NM). You can improvise and make your own, just mix some raspberry jam/jelly with regular chipotle sauce and use it as a dip for the meat. You can adjust the flavor by adding a different marinade or spices (look at the ones the stores have that are pre-seasoned to give you more ideas). I used the juice from the pork loin as the base for my gravy --- WARNING, the lemon juice is tart in the gravy, so either plan on adding broth to tone the lemon flavor down, or start from scratch for the gravy.
I would give it a 4 stars - it is yummy and moist, and can be used for so many different things...plain, w/bbq sauce for sandwiches, with gravy or other sauces (like that raspberry chipotle sauce...)
