Day 165: Chow Mein Casserole

1 lb lean hamburger
3/4 cup rice
2 medium onions
1 cup chopped celery
1 1/2 cup water
1 can cream of chicken soup
1 can cream of mushroom soup
1/4 cup soy sauce
1/4 can water
chow mein noodles

Bring 1 1/2 cup water to boil and add rice. Cook until done. Brown hamburger, onion, and celery. Add chicken soup, mushroom soup, soy sauce, and water to the cooked rice. Pour into slow cooker and cook on low for 3-4 hours. Sprinkle chow mein noodles on top when serving.

Several years ago I ran a marathon close to where my Grandma lives. After the marathon was over I went to her house for lunch and she served this dish. I have loved it ever since! It just tasted so good to me! This is traditionally done in the oven, but works great in the slow cooker as well. No need to warm up your already hot kitchen this summer by turning on the oven. Just turn on your crockpot instead. 3 stars.

  1. My mom used to make this, and I haven't had it in forever! But don't you miss the chow mein being toasted?

Note to anyone who doesn't realize it that chow mein noodles are not "toasted" nor "crispy," they are "soft" noodles.

  3. Wow. Interesting comment from Anonymous.

I've been buying Chow Mein Noodles for years - in both bags and cans, and they are always crispy and crunchy.

I didn't know there were 'soft' ones.

  4. I agree - the chow mein noodles I've purchased in the past have been crispy and crunchy. However, the last bag I purchased was VERY crunchy - too much so. Next time I will go to another store when I purchase them.
