Description
Seasoned ground beef with potatoes, tomatoes, cabbage and cheese. An easy Instant Pot one pot meal.

- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 2 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp black pepper
- 1/2 cup chicken broth
- 2 cups chopped cabbage
- 1 (14.5 oz) can petite diced tomatoes
- 20 ounces Russet potatoes (4 medium small), peeled and sliced into quarter inch rounds
- Pinch of kosher salt
- 1 cup shredded cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.
- Stir in the garlic powder, 1 tsp kosher salt, cumin, paprika and pepper.
- Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Layer the cabbage on top, then tomatoes and finally the potatoes evenly on top. Don’t stir. Sprinkle a pinch of salt over the potatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir. Sprinkle cheese on top and let it melt.
