Description

Seasoned ground beef with potatoes, tomatoes, cabbage and cheese. An easy Instant Pot one pot meal.


Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 2 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1/2 cup chicken broth
  • 2 cups chopped cabbage
  • 1 (14.5 oz) can petite diced tomatoes
  • 20 ounces Russet potatoes (4 medium small), peeled and sliced into quarter inch rounds
  • Pinch of kosher salt
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.
  2. Stir in the garlic powder, 1 tsp kosher salt, cumin, paprika and pepper.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  4. Layer the cabbage on top, then tomatoes and finally the potatoes evenly on top. Don’t stir. Sprinkle a pinch of salt over the potatoes.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. Stir. Sprinkle cheese on top and let it melt.
  7. Serve and enjoy!
