Description
A hearty soup with smoked sausage, beans, tomatoes and potatoes.
Ingredients

- 2 tsp olive oil
- 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
- 2 cups beef broth
- 1 (15.5 oz) can kidney beans, rinsed and drained
- 1 (15.5 oz) can black beans, rinsed and drained
- 1 (28 oz) can crushed tomatoes
- 8 ounces potatoes, cut into 1 inch cubes
- 1/4 tsp kosher salt (plus more to taste)
- 1/4 tsp black pepper
- 1 tsp garlic powder
- 1 Tbsp Italian seasoning
- 1 red bell pepper, cored and diced
- 1 green bell pepper, cored and diced
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown for about 2 minutes on each side.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Dump in the kidney beans, black beans, tomatoes, potatoes, salt, pepper, garlic powder, Italian seasoning and bell peppers. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir. Taste test and add salt to taste, if needed. Ladle into bowls and enjoy!
Slow Cooker Instructions:
- Dump the smoked sausage, kidney beans, black beans, tomatoes, potatoes, salt, pepper, garlic powder, Italian seasoning and bell peppers into slow cooker. Stir.
- Cover and cook on low for 6 hours.
- Stir. Taste test and add salt to taste, if needed. Ladle into bowls and enjoy!
