Description

A hearty soup with smoked sausage, beans, tomatoes and potatoes.


Ingredients

Scale
  • 2 tsp olive oil
  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
  • 2 cups beef broth
  • 1 (15.5 oz) can kidney beans, rinsed and drained
  • 1 (15.5 oz) can black beans, rinsed and drained
  • 1 (28 oz) can crushed tomatoes
  • 8 ounces potatoes, cut into 1 inch cubes
  • 1/4 tsp kosher salt (plus more to taste)
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 Tbsp Italian seasoning
  • 1 red bell pepper, cored and diced
  • 1 green bell pepper, cored and diced

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown for about 2 minutes on each side. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Dump in the kidney beans, black beans, tomatoes, potatoes, salt, pepper, garlic powder, Italian seasoning and bell peppers. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir. Taste test and add salt to taste, if needed. Ladle into bowls and enjoy!

Slow Cooker Instructions: 

  1. Dump the smoked sausage, kidney beans, black beans, tomatoes, potatoes, salt, pepper, garlic powder, Italian seasoning and bell peppers into slow cooker. Stir.
  2. Cover and cook on low for 6 hours.
  3. Stir. Taste test and add salt to taste, if needed. Ladle into bowls and enjoy!
