Description
A one-pot Instant Pot dish featuring seasoned ground pork, chili beans, rice, and Rotel with melty cheddar on top.
Ingredients
- 1 pound lean ground pork
- 1 Tbsp dry onion flakes
- 1 Tbsp chili powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp cumin
- 1 1/2 cups chicken broth
- 1 cup converted rice
- 1 (15 oz) can chili beans
- 1 (10 oz) can Rotel
- 1 cup shredded cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the pork and break it up. Add in the onion, chili powder, salt, pepper, garlic powder and cumin. Brown for 5 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Dump the beans and rotel evenly over the top of the rice.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid
- Stir. Sprinkle cheese on top and let it melt. Serve and enjoy!
Notes
To make in the slow cooker: Start by browning the ground pork in a skillet over medium heat with the dry onion flakes, chili powder, salt, pepper, garlic powder, and cumin. Cook for about 5 minutes, breaking up the meat as it cooks. Once browned, transfer the seasoned pork to the slow cooker. Add the chicken broth, rice, beans and Rotel and stir. Cover and cook on low for 4 hours or high for 2.5–3 hours, until the rice is tender and the liquid is absorbed. Once done, give everything a good stir, sprinkle the shredded cheddar cheese over the top, cover for another 5–10 minutes until the cheese melts, then serve.
