Description

An Instant Pot dinner made with tender chicken, ranch seasoning, rice, ranch style beans, green chiles, and corn for an easy one pot meal.


Ingredients

Scale
  • 1 1/2 cups chicken broth
  • 1 cup parboiled rice
  • 16 oz boneless skinless chicken breasts
  • 3 Tbsp dry ranch dressing mix
  • 1 (15 oz) ranch style beans
  • 1 (4 oz) can diced green chiles
  • 1 cup frozen corn
  • 1/2 (10.5-ounce) can cream of chicken soup
  • For topping: shredded cheddar cheese and sour cream

Instructions

  1. Pour broth into the Instant Pot. Sprinkle in the rice. Place chicken on top. Sprinkle the chicken with ranch dressing mix. Dump the beans, green chiles, corn and cream of chicken soup on top. Don’t stir.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 8 minutes. When time is up let pot sit for 5-10 minutes and move valve to venting. Remove the lid. 
  3. Shred chicken. Stir. Serve topped with cheese and sour cream.
