Description

Instant Pot dinner with sausage, rice, Rotel tomatoes and green peppers. An easy and fast recipe for “unstuffed” peppers. 


Ingredients

  • 1 pound Tennessee Pride sausage
  • 1 cup diced onion
  • 1 1/2 cups beef or chicken broth
  • 1 1/4 cups converted rice
  • 1 (10 oz) can Rotel tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • 1 bell green pepper, cored and large diced
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Brown sausage for 5 minutes. Add in the onions and saute for 4 more minutes. Drain off excess grease.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Dump in the tomatoes, tomato sauce, garlic powder, Italian seasoning and bell peppers. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir well. Sprinkle the cheese on top and let it melt. Serve and enjoy!
