Description

A set-it-and-forget-it slow cooker (or oven) dinner with chicken, veggies, and a cobbler topping.


Ingredients

Scale
  • 2 cups cooked cubed chicken
  • 1 1/2 cups frozen mixed veggies (I used peas, corn and green beans)
  • 1/2 cup self rising flour
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp poultry seasoning
  • Dash of smoked paprika
  • 1 cup evaporated milk
  • 1/2 tsp Better than Bouillon chicken base
  • 4 Tbsp melted butter
  • 1/2 cup water
  • 1/2 of a can of cream of chicken soup (150 grams)

Instructions

Slow Cooker Instructions:

  1. Spray bottom of slow cooker with non-stick cooking spray. Evenly spread the chicken and veggies in the bottom of slow cooker.
  2. Sift the flour into a medium mixing bowl. Whisk in the salt, pepper, garlic powder, onion powder, poultry seasoning, smoked paprika, evaporated milk and Better than Bouillon. Whisk until smooth. Pour the mixture over the chicken and veggies. 
  3. Drizzle the melted butter over the top.
  4. In the same mixing bowl whisk together the water and cream of chicken. Pour that mixture over the top of everything in the slow cooker.
  5. Cover and cook on low for 4 hours or on high for 2-3 hours. 

Oven Instructions:

  1. Heat oven to 350° F. Spray bottom of a 9×13 inch pan with non-stick cooking spray. Evenly spread the chicken and veggies in the bottom of the pan.
  2. Sift the flour into a medium mixing bowl. Whisk in the salt, pepper, garlic powder, onion powder, poultry seasoning, smoked paprika, evaporated milk and Better than Bouillon. Whisk until smooth. Pour the mixture over the chicken and veggies. 
  3. Drizzle the melted butter over the top.
  4. In the same mixing bowl whisk together the water and cream of chicken. Pour that mixture over the top of everything in the pan.
  5. Bake for about 30-40 minutes, or until top is golden brown. 

Notes

This recipe can easily be doubled. The cooking time for the slow cooker will need to be increased by 30-60 minutes. The oven time will be closer to 40 minutes than 30 minutes.
