Description

Instant Pot beefy penne pasta with fire roasted tomatoes and cheese. A hearty meal that your teens will gobble up!


Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 2 cups chicken broth
  • 8 ounces penne pasta
  • 1 (15 oz) can fire roasted tomatoes
  • 2 Tbsp dijon mustard
  • 1 yellow bell pepper, cored and diced
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease.
  2. Stir in the garlic powder, salt and pepper. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Evenly dump in the penne. Dump tomatoes, mustard and yellow pepper on the top. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Stir well. Stir in the cheese. Serve and enjoy!
