Description

A stupid easy, 6-ingredient, dump and go recipe for chicken and rice with salsa and corn in the Instant Pot. 


Ingredients

Scale
  • 1 1/2 cups chicken broth
  • 1 cup converted rice
  • 16 ounces chicken breasts (sliced thin)
  • 1 1/2 Tbsp taco seasoning
  • 1 cup salsa
  • 1 cup frozen sweet corn
  • Toppings: cheese and sour cream

Instructions

  1. Pour broth into Instant Pot. Sprinkle in the rice. Lay the chicken into the pot (do not overlap). Sprinkle the chicken with the taco seasoning and then spoon the salsa on top of the chicken. Dump in the corn.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let the pot release naturally for at least 10-15 minutes. Move valve to venting and remove the lid.
  3. Move chicken to a cutting board and shred. Stir it back into the pot.
  4. Serve with a bit of shredded cheese and a dollop of sour cream.
