Description

An easy Instant Pot dinner with seasoned ground beef, tender potatoes, salsa verde, and melted cheddar cheese.


Ingredients

Scale
  • 12 oz lean ground beef
  • 1 small onion, diced
  • 1 tsp kosher salt
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 cup beef broth
  • 16 oz Russet potatoes, peeled and cut into 1/2 inch cubes
  • 1 (7 oz) can salsa verde
  • 1 cup frozen corn
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in salt, chili powder, cumin and garlic powder. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the potatoes and pour the salsa verde on top. Dump in the corn. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the cheese. Serve and enjoy!
