Description

An easy soup made with ground beef, black beans, pinto beans, corn, Rotel tomatoes, ranch seasoning and cream cheese for a rich and flavorful taco-inspired soup. Make it in the Instant Pot or the slow cooker.

Ingredients

Scale
  • 16 oz lean ground beef
  • Pinch of kosher salt
  • 1 cup diced onion
  • 4 cups beef or chicken broth
  • 1 (10 oz) can Rotel tomatoes (I used mild)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can pinto beans, rinsed and drained
  • 2 cups frozen corn
  • 4 Tbsp dry ranch dressing mix
  • 2 Tbsp chili powder
  • 2 tsp cumin
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 8 oz cream cheese

Instructions

  1. Instant Pot Instructions
  2. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. If there is excess grease, drain it off. Stir in the pinch of salt.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking.
  4. Dump in the Rotel, black beans, pinto beans, corn, ranch mix, chili powder, cumin, garlic powder, pepper and cream cheese. Don’t stir.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 5 minutes (or low pressure for 5 minutes). When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. Stir well so that the cream cheese is incorporated. Add salt to taste, as needed. (Mine just needed a pinch).
  7. Ladle into bowls and serve.
  8. Slow Cooker Instructions
  9. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for about 5 minutes. If there is excess grease, drain it off. Stir in the pinch of salt. Transfer to the slow cooker
  10. Stir in the broth, Rotel, black beans, pinto beans, corn, ranch mix, chili powder, cumin, garlic powder, pepper and cream cheese (cream cheese can just be in a block it doesn’t need to be stirred in).
  11. Cover and cook on low for 4 hours.
  12. Stir well so that the cream cheese is incorporated. Add salt to taste, as needed. (Mine just needed a pinch).
  13. Ladle into bowls and serve.
