Description

A quick one-pot Instant Pot dinner made with seasoned ground beef, tender pasta shells, cabbage, tomatoes and melty cheddar cheese.


Ingredients

  • 16 oz lean ground beef
  • 1 cup diced onion
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 1/2 tsp cajun seasoning (with salt), divided
  • 1 Tbsp Worcestershire sauce
  • 2 cups chicken broth
  • 8 oz small pasta shells
  • 3 cups shredded cabbage
  • 1 (15 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 medium carrots, shredded
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Cook beef until it is no longer pink. Drain off excess grease. Stir in the garlic powder, paprika, thyme, pepper and 1 tsp of the cajun seasoning.
  2. Pour in the Worcestershire and broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the pasta. Then dump the cabbage, tomatoes, tomato sauce and carrots on top. Sprinkle the remaining ½ tsp of cajun on top. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the cheese. 
  6. Scoop onto plates and enjoy!
