Slow Cooker (or Oven) Tortellini Lasagna Casserole with Sausage

Description

Simple to make but you wouldn’t know it! This easy dinner recipe for tortellini lasagna with smoked sausage has all your favorite flavors but doesn’t require browning meat or cooking noodles before putting it together. The added bonus is that you can cook it in the oven or the slow cooker–it’s up to you!


Ingredients

  • 1 (8 oz) brick of cream cheese
  • 1 cup cottage cheese (or you can use ricotta)
  • 1/4 cup sour cream
  • 1 (14 oz) package of Hillshire Farms Smoked Sausage, sliced into 1/4 inch half moon slices
  • 1 (24 oz) jar of spaghetti sauce (I used tomato and basil)
  • 1 (19 oz) package frozen cheese tortellinis
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Combine cream cheese, cottage cheese and sour cream in a blender. Blend until smooth.
  2. In the bottom of your slow cooker or 9 x 13 inch pan (if you’re baking in the oven), pour in half the package of tortellini.
  3. Layer half the sausage, half the sauce, all the cream cheese mixture, the rest of the tortellini, the rest of the sausage and the rest of the sauce.
  4. Sprinkle the top with Parmesan cheese.
  5. If baking in the oven, cover the pan with foil and bake for 45 minutes at 350° and then remove the foil and bake for an additional 15 minutes. If cooking in the slow cooker* cover and cook on HIGH for 3-4 hours or on LOW for 5-6 hours.
  6. Sprinkle with basil and serve.

Notes

*I used my 3 quart casserole crock but if you don’t have a casserole crock you can use a 4-6 quart oval slow cooker.
