Description

A cozy soup made with Italian meatballs, ditalini pasta, tomatoes, spinach, Parmesan and a creamy tomato broth.


Ingredients

Scale
  • 3 cups chicken broth
  • 14 oz crushed tomatoes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • 1 1/2 Tbsp tomato paste
  • 12 oz frozen Italian style meatballs
  • 2 oz ditalini
  • 1/2 cup heavy cream or evaporated milk
  • Pinch of kosher salt
  • 1/2 cup chopped spinach
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Add broth, crushed tomatoes, onion powder, garlic powder, pepper, paprika, thyme, basil, tomato paste and meatballs to slow cooker and stir.
  2. Cover and cook on high for 1 ½-2 hours.
  3. Stir in the ditalini and cook for 15 more minutes, until pasta is cooked.
  4. Stir a cup of hot broth into the cream to temper it and stir it into the slow cooker.
  5. Stir in the salt, spinach and parmesan cheese.
  6. Ladle into bowls and serve.
