Description
A delicious, simple vegetable soup that is inexpensive and fast to put together. Make it in your Instant Pot or Crockpot.
Ingredients

- 4 cups water
- 4 teaspoons Better than Bouillon Vegetable Base
- 1 (14.5 oz) can petite diced tomatoes
- 1 (16 oz) can tomato sauce
- 1 (12 oz) package frozen vegetables (I used broccoli, cauliflower and carrot mix)
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1 1/2 tsp Italian seasoning
- 1/2 tsp black pepper
- Optional: 1/2 cup uncooked orzo pasta
Instructions
Instant Pot Instructions:
- Pour water into Instant Pot. Add in bouillon, tomatoes, tomato sauce, vegetables, garlic powder, onion powder, Italian seasoning, pepper and orzo, if using.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Ladle into bowls and serve.
Slow Cooker Instructions:
- Add all ingredients into slow cooker.
- Cover and cook on low for 3 hours or on high for 2 hours.
- Ladle into bowls and serve.
