Description

A delicious, simple vegetable soup that is inexpensive and fast to put together. Make it in your Instant Pot or Crockpot. 


Ingredients

Scale
  • 4 cups water
  • 4 teaspoons Better than Bouillon Vegetable Base
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (16 oz) can tomato sauce
  • 1 (12 oz) package frozen vegetables (I used broccoli, cauliflower and carrot mix)
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • Optional: 1/2 cup uncooked orzo pasta

Instructions

Instant Pot Instructions:

  1. Pour water into Instant Pot. Add in bouillon, tomatoes, tomato sauce, vegetables, garlic powder, onion powder, Italian seasoning, pepper and orzo, if using.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  3. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Add all ingredients into slow cooker.
  2. Cover and cook on low for 3 hours or on high for 2 hours. 
  3. Ladle into bowls and serve.
