Description
Instant Pot ground beef, pasta and salsa casserole with cheese and a crunchy topping.

- 1 pound lean ground beef
- Salt and pepper
- 1 large carrot, shredded
- 3 green onions, diced
- 3 garlic cloves, minced
- 2 cups beef broth
- 8 ounces radiatore pasta
- 1 (4 oz) can diced green chiles
- 1 (8 oz) can tomato sauce
- 1 cup picante sauce or salsa
- 1 cup shredded cheddar
- 1/2 cup french fried onions
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Brown for 5 minutes. Drain off excess grease. Lightly salt and pepper the beef.
- Stir in the carrot, green onions and garlic.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Evenly sprinkle in the pasta. Dump the green chiles, tomato sauce and picante sauce on top. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in half of the cheese. Sprinkle remaining cheese on top and then sprinkle the onions on top. Serve and enjoy!
