Description

Instant Pot ground beef, pasta and salsa casserole with cheese and a crunchy topping.


Ingredients

Scale
  • 1 pound lean ground beef
  • Salt and pepper
  • 1 large carrot, shredded
  • 3 green onions, diced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 8 ounces radiatore pasta
  • 1 (4 oz) can diced green chiles
  • 1 (8 oz) can tomato sauce
  • 1 cup picante sauce or salsa
  • 1 cup shredded cheddar
  • 1/2 cup french fried onions

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Brown for 5 minutes. Drain off excess grease. Lightly salt and pepper the beef. 
  2. Stir in the carrot, green onions and garlic.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. Evenly sprinkle in the pasta. Dump the green chiles, tomato sauce and picante sauce on top. Don’t stir.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  6. Stir in half of the cheese. Sprinkle remaining cheese on top and then sprinkle the onions on top. Serve and enjoy!
