Description

A slow cooker ground beef and potato dish that is made with yukon gold potatoes, fresh green beans, sliced mushrooms and a savory tomato-based broth.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 packet dry onion soup mix
  • 1 cup tomato juice
  • 1/2 tsp black pepper
  • 8 oz sliced mushrooms
  • 8 oz trimmed green beans, cut into 1 inch pieces
  • 2 Tbsp Worcestershire sauce
  • 1 tsp mustard powder
  • 20 oz yukon gold potatoes, cut into 1/2 inch cubes
  • 1 Tbsp quick cooking tapioca, optional

Instructions

  1. Heat a pan over medium high heat. Add in the beef and break it up. Brown until no pink remains. Drain off excess grease and stir in the onion soup mix. Transfer to the slow cooker.
  2. Stir in the tomato juice, pepper, mushrooms, green beans, Worcestershire, mustard powder,  potatoes and tapioca.
  3. Cover and cook on low for 2-3 hours, or until potatoes are tender. 
  4. Stir, serve and enjoy!
