Wow.  Can you say blowout?  Emily, what happened??

Chicken and Mushrooms:
I really enjoyed the amount of garlic and mushrooms in this dish which was delicious with the thyme. The chicken stayed very moist and was very flavorful.  I loved the broth and wish I had served it with rice because it needed something to soak it up off the plate I made the mistake of serving it over noodles.  I put the cornstarch into it, but it didn’t thicken up enough to stick to the noodles.

Thai Soup:
I double checked the recipe, and had all the ingredients right, but his did not stay soup for me. My rice was nice and soft. It smelled wonderful cooking, but there was not enough flavor to it. I think it needed a little chicken broth instead of just water and more coconut milk.  I would also suggest throwing in some lemon grass and cilantro.  I made it with the chicken and the chicken ended up a little dry.  I liked all the veggies in it and brown rice.  Healthy, but not a new favorite.
