Description

A hearty dish of ground beef, cubed potatoes, bell pepper and cheddar cheese. All made in one pot…your Instant Pot. With just a 2 minute pressure cook time this recipe could become a new family favorite!


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 garlic cloves, minced
  • 1/2 cup beef broth
  • 1 tsp kosher salt
  • 1 tsp paprika
  • 1 tsp pepper
  • 1 tsp italian seasoning
  • 1 tsp parsley
  • 1/2 tsp crushed red pepper flakes
  • 22 ounces of russet potatoes, peeled and diced (this was 4 medium russet potatoes for me)
  • 2 Tbsp tomato paste
  • 1 red bell pepper, large diced
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Stir in the garlic.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the salt, paprika, pepper, Italian seasoning, parsley, red pepper. Then dump in the potatoes, tomato paste and bell pepper. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.
  5. Gently stir in the cheese.  
  6. Serve and enjoy!
