Description

A rich and hearty beef stew that is so easy to make with just a few ingredients! Make this in your Instant Pot or slow cooker. 


Ingredients

Scale
  • 1 cup water
  • 2 1/2 pounds beef stew meat
  • 1 (1 oz) package onion soup mix
  • 1 bay leaf
  • 2 pounds Russet potatoes (56 medium)
  • 12 oz carrots (about 5 carrots)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp pepper
  • 2 (8 oz) cans tomato sauce
  • 1 (10.5 oz) can cream of mushroom soup

Instructions

Instant Pot Instructions:

  1. Pour water into Instant Pot. Add in the beef stew meat and sprinkle it with the onion soup mix. Add in the bay leaf. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes.
  3. Meanwhile peel the potatoes and cut into cubes. Peel the carrots and slice. 
  4. When time is up on the Instant Pot move valve to venting and remove the lid. 
  5. Add in the potatoes and carrots. Sprinkle with the garlic powder, onion powder and pepper. Dump the tomato sauce and cream of mushroom soup on top, don’t stir.
  6. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  7. Stir well. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Peel and cut potatoes into cubes. Peel and slice carrots.
  2. Add all ingredients into slow cooker and stir. 
  3. Cover slow cooker and cook on low for 6-8 hours or until meat and potatoes are tender. 
  4. Ladle into bowls and serve.
