Description
Browned ground beef with melty cheese and caramelized onions served on a toasted bun and topped with mayo, ketchup, lettuce and tomatoes. An Instant Pot version of the NYC chopped cheese sandwich.

- 1/4 cup water
- 1 sweet onion, chopped
- 2 tsp olive oil
- 1/8 tsp baking soda
- 1 pound 85/15 ground beef
- 3/4 tsp kosher salt
- 1/2 tsp pepper
- 4 (1 oz) slices American or cheddar cheese
- 4 hero rolls
- Mayo
- Ketchup
- Sliced tomatoes
- Shredded lettuce
Instructions
- Pour water into Instant Pot. Add in onion. Drizzle oil over the onion. Sprinkle baking soda over the top of the onion.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid.
- Turn Instant Pot to saute setting. Add in the ground beef with the onions. Break up the beef and brown and cook through for about 5 minutes. Add in the salt and pepper.
- Turn Instant Pot to keep warm setting. Place the cheese slices on top of the meat and let melt.
- Slice the hero rolls ¾ of the way through with a serrated knife. Toast the buns (I used oven’s broiler). Spread mayo on each of the buns. Drizzle ketchup on top of mayo.
- Use a spatula to transfer a quarter of the meat and cheese filling to each sandwich. Add sliced tomatoes and lettuce. Season with salt and pepper.
