Description

A perfect Sunday supper made in the Instant Pot. With Italian sausage, red potatoes, cabbage and carrots it’s a meal all in one pot!


Ingredients

  • 1 pound Italian sausage
  • 1 cup diced onion
  • 4 ounces mushrooms, quartered
  • 1/2 cup chicken or beef broth
  • 2 1/2 cups shredded cabbage
  • 20 ounces red potatoes, cut into eighths
  • 2 large carrots, peeled and cut into chunks
  • 1 Tbsp olive oil
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp fennel seeds
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 Tbsp balsamic vinegar

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onions and mushrooms. Brown for about 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Evenly add in the cabbage on top. Layer in the potatoes and carrots. Drizzle with olive oil and then sprinkle the basil, oregano, fennel, salt, pepper and garlic powder on top. Drizzle the balsamic on top.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Gently stir. Serve and enjoy!
