Description

Black eyed peas with rice, vegetables, seasonings and melty cheese. An easy one pot meal that you can make quickly in your Instant Pot. 


Ingredients

  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 2 ribs of celery, diced
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1 1/2 cup chicken broth
  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite size pieces
  • 1 cup converted rice
  • 1 (10 oz) can Rotel
  • 1 (15.5 oz) can black eyed peas, rinsed and drained
  • 1 (8 oz) can tomato sauce
  • 1 (15.25 oz) can corn, rinsed and drained
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and celery and saute for 4 minutes. Stir in the garlic powder, salt pepper, paprika and broth. Scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  2. Add the chicken into the pot (evenly spread out). Sprinkle the rice over the top. Dump in the Rotel, black eyed peas, tomato sauce and corn (don’t stir). 
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting and remove the lid. 
  4. Stir. If there is excess liquid let it sit for a few more minutes and the rice will soak it up. Sprinkle the cheese on top and let it melt. Serve and enjoy.
