Description
Black eyed peas with rice, vegetables, seasonings and melty cheese. An easy one pot meal that you can make quickly in your Instant Pot.

- 1 Tbsp olive oil
- 1 cup diced onion
- 2 ribs of celery, diced
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/4 tsp smoked paprika
- 1 1/2 cup chicken broth
- 1 1/2 pounds boneless skinless chicken thighs, cut into bite size pieces
- 1 cup converted rice
- 1 (10 oz) can Rotel
- 1 (15.5 oz) can black eyed peas, rinsed and drained
- 1 (8 oz) can tomato sauce
- 1 (15.25 oz) can corn, rinsed and drained
- 1 cup shredded cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and celery and saute for 4 minutes. Stir in the garlic powder, salt pepper, paprika and broth. Scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add the chicken into the pot (evenly spread out). Sprinkle the rice over the top. Dump in the Rotel, black eyed peas, tomato sauce and corn (don’t stir).
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting and remove the lid.
- Stir. If there is excess liquid let it sit for a few more minutes and the rice will soak it up. Sprinkle the cheese on top and let it melt. Serve and enjoy.
