Description

An Instant Pot dinner with a cheesy mix of ground beef, rice, tomatoes, corn, and bell pepper all pressure cooked together in one pot for a quick meal.


Ingredients

Scale
  • 8 oz lean ground beef
  • 1/2 cup chopped onion
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp chili powder
  • 1 tsp garlic powder
  • Dash of smoked paprika
  • 1 cup beef broth
  • 2/3 cup converted rice
  • 1 tsp Worcestershire sauce
  • 1 (14.5 oz) can diced tomatoes
  • 2/3 cup frozen sweet corn
  • 1/2 cup diced green bell pepper
  • 4 oz shredded cheddar cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, chili powder, garlic powder and smoked paprika. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Add in the Worcestershire sauce, diced tomatoes, corn and bell pepper.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the cheddar. Salt to taste. Serve and enjoy!
