Description

An easy one-pot dinner made with tender beef, rice, celery, onion and creamy mushroom soup.


Ingredients

Scale
  • 16 oz lean ground beef
  • 2 ribs of celery, sliced or diced
  • 1 small onion, diced
  • 1 Tbsp low sodium soy sauce
  • 1 1/2 cups low sodium beef broth
  • 1 cup converted rice
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 (10.5 oz) can cream of mushroom soup

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the celery and onion. Brown for 5 minutes. Drain off excess grease. Stir in the soy sauce.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Sprinkle in the rice, pepper and garlic powder. Scoop the condensed soup over the top. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir. Serve and enjoy!
