Two Mexican dishes up next and two potato dishes.  How will these games turn out?

Mexican Tortilla Pie

Brandi was our volunteer on these two Mexican dishes.  She said that the tortilla pie, “Easy to prep.  I did use ยฝ can diced tomatoes in lieu of
fresh.
  They seemed to work well.  Rotel tomatoes would be a nice zing as well.  The foil sling was well worth it!  Probably wonโ€™t make
this again.  Very heavy so a little went
a long way and it 
wasn’t very good warmed up. 
Husband refused to eat because of the refried beans
I thought it had good
flavor.  The picky 10-year-old picked out
the black beans but ate the rest so thatโ€™s always promising.  The 6-year-old said โ€œthis is AWESOMEโ€.  I served it with sour cream and hot sauce.
A good value for the
money.  It was a heavy dish so you get a
lot of servings out of it.”

Salsa Rice Bake
“The Salsa Rice Bake was very easy to
prep.  I used regular brown rice and a
roll of mild sausage.  My only problem
with it is it 
doesn’t cook long enough. 
Unless Iโ€™m home all day, I canโ€™t make it.  I donโ€™t know that it needs to cook for the
full 2 hours.  I cooked on high for about
1 ยฝ hours and it was steaming.  
Might very well make
this again.
  Would actually be a good
pot-luck side dish.  
Loved the
flavor.
  Husband thought it could use 1 ยฝ
pounds of sausage but I thought there was plenty of sausage flavor.
  I liked the cilantro addition at the end.  Might add the cheese at the end otherwise it doesn’t get mixed in enough.  Leftovers
were great!
  Served with hot sauce and
sour cream.  
Very cheap.  This makes A LOT.  Husband and I had two pretty large servings
and I still ended up with 5 servings of leftovers.
  I really liked this dish.”

Sweet Potato Bake

Lori tried these two potato dishes.  She said, “This was a VERY easy recipe to make.  My son and I are not fans of sweetpotatoes, but I’m always willing to try them in hopes of liking them.  I do have to say they weren’t bad, but the only time I’ll make them again is if I’m going to a potluck where others like sweet potatoes.  I would encourage everyone, especially those who like sweet potatoes, to try these as they are easy and economical.”

Mashed Potatoes

“Again, this recipe was VERY easy.  My son and I liked these very much and I will make them again with a few changes.  I’ll use regular milk instead of buttermilk, since that is what I normally have on hand.  Also, I don’t normally keep whole garlic, but I do keep a jar of minced garlic in the fridge and I’ll use that (if I use garlic) instead.  I found that the garlic cloves mushed up and I couldn’t pull them out at the end of the cooking time.  I gave the value a ‘7’ because of using buttermilk and garlic cloves instead of what I normally keep.”
