1 1/2 pounds boneless beef chuck roast, sliced into thin strips
1 1/3 cup beef broth
1/2 cup oyster sauce (found in the Asian section of the grocery store)
2 Tbsp cornstarch
1/2 lb to 1 lb fresh broccoli florets
Toasted sesame seeds (for garnish)
Hot cooked rice (optional)
Place beef in slow cooker and then pour the beef broth and oyster sauce over the top. Cover and cook on LOW for 6 hours or on HIGH for 3 hours or until beef is very tender. Place broccoli in microwave safe bowl with 1/4 cup water. Microwave for about 4-5 mintues, until broccoli is tender. Meanwhile, combine cornstarch and 2 tbsp cooking liquid in a cup. Add to slow cooker and stir well to combine. Drain the broccoli and stir into the slow cooker. Cook without cover on HIGH for about 15 minutes or until sauce is thickened. Serve over rice and garnish with sesame seeds.
Review:
A classic Chinese dish with a beautiful sauce. It didn’t have the wow factor that I was looking for. The beef was very tender though and the sesame seeds added an interesting twist. I think next time I will add in some minced garlic to give it a little more flavor. 3 1/2 stars.
p.s. it’s the last day of my 31 recipes in 31 days self imposed challenge. I am so proud of myself. But more than that I’m in awe of myself that I did 365 recipes in 365 days 2 years ago. What in the heck?!? I CANNOT believe that I was able to complete that. Sooooo time consuming. Holy cow.
Some of my faves from this month:
Asian Chicken
Smothered Pork Chops
Coconut Thai Soup
Raspberry Chocolate Sauce (oh yeah!)
Whole Wheat Lasagna
Apple Cinnamon Oatmeal
Chicken Taco Filling
Dijon Chicken
Tomato Basil Ravioli Soup
can you cut everything up and put it in a freezer bag to freeze for a later time? I want to try this recipe, but I am also trying to cook/prepare on the weekends for the whole week.
Thank you
Yes I'm sure you could do that!
We're big eaters that like beef, broccoli and lots of sauce. So… I doubled everything! Followed directions except adding 2 garlic cloves and everyone enjoyed the meal over white rice. My only suggestion would be to add a little heat next time. I added ground red pepper flakes to my plate but might have been better if cooked in.
