6 cups cubed French bread (stale or toasted)
1/2 cup semi sweet chocolate chips
2 cups evaporated milk
4 egg yolks
1/3 cup sugar
1/2 cup peanut butter
2 tsp vanilla
1/4 tsp salt
1/4 cup cocoa
Spray slow cooker with nonstick cooking spray. Toss bread cubes and chocolate chips together in slow cooker. In a separate bowl, whisk milk, yolks, sugar, peanut butter, vanilla, salt and cocoa together. Pour over the top of the bread and push down the bread to submerge in the liquid. Cover and cook on LOW for 3-4 hours or on HIGH for 1 1/2 to 2 hours. Makes 6 servings.
Review:
I loved the idea of this. Chocolate and peanut butter, peanut butter and chocolate. They’re awesome, aren’t they? I just don’t know if I am a huge fan of bread puddings, in general. Don’t get me wrong, I liked it and ate it (probably too much) but would it be my first choice for a dessert? Probably not. I’d choose brownies, cookies, ice cream or something like that. 3 stars.
