1 cup instant brown rice (white rice will get mushy)
1 1/2 tsp canola oil
1/4 tsp salt
1/4 tsp chili powder
1 cup boiling water
1 1/2 Tbsp tomato paste
1 garlic clove, minced
1/4 cup fresh cilantro, chopped
1 Tbsp lime juice
1/3 cup salsa or picante sauce
Spray slow cooker with nonstick cooking spray. Add in the rice, oil, salt and chili powder to slow cooker. Whisk the boiling water, paste, garlic together and pour into the slow cooker. Cover and cook on LOW for 2 hours. Stir in the lime juice, cilantro and salsa and serve.

This is a wonderful side dish to go along the tacos from the other day’s post. If you want to use regular long grain brown rice instead of the minute rice, you can. Just cook on HIGH for 2 hours instead of LOW and use 1 1/2 cups water instead of 1 cup. 4 stars
That is a good tip about the brown rice instead of white rice. I love slow cooked rice, the flavours get so absorbed.
