Makes 6 servings
4 medium sweet potatoes, peeled and sliced 1/4 inch thick
1 1/2 cups water
1 tsp salt
2 Tbsp butter
2 Tbsp milk (I used 1%)
Salt and pepper to taste
Place potatoes, water and salt in slow cooker. Cover and cook on low for about 4-6 hours. Drain the potatoes and then return to the slow cooker. Mash the potatoes with a fork or potato masher. Stir in the butter (until melted) and milk. Salt and pepper to taste.

I am really into sweet potatoes lately. They are packed with nutrients and that makes me feel better about the fact that I’m adding butter to them. I personally prefer my sweet potatoes baked (like a baked potato). The consistency of these mashed sweet potatoes reminded me of baby food. But they were still good and if you have a baby it would be a great (and easy) way to make baby food. 3 stars (I am the ONLY person in my family that will eat them…wah!)
If you use a milk with less than 2% fat in it (1%, skim, etc.) they have found that your body cannot process the calcium out of it. "Whole" milk is actually only 4%.
