Description

An easy Instant Pot dinner made with seasoned ground beef, rice, cheddar cheese, ketchup, mustard and dill pickle flavor.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1/2 cup diced onion
  • 2 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 tsp smoked paprika
  • 2 cups beef broth
  • 1/4 cup dill pickle juice
  • 1 1/2 cups converted rice
  • 1/4 cup ketchup
  • 2 Tbsp mustard
  • 1 Tbsp Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced dill pickles

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the garlic powder, salt, pepper and smoked paprika.
  2. Pour in the broth and pickle juice and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice. Dump the ketchup, mustard and Worcestershire into the pot. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure the valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the cheddar and pickles.
  6. Serve and enjoy!
