Description

Rice with mushrooms and creamy lentils made fast in the Instant Pot. A healthy, one pot dish.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1/2 cup diced onion
  • 1 cup sliced mushrooms
  • 1 1/2 cups water
  • 1 Tbsp Better than Bouillon chicken base
  • 1/2 cup converted rice
  • 1/2 cup red lentils
  • 1 carrot, peeled and sliced
  • 1 tsp Italian seasoning
  • Pinch of kosher salt and black pepper
  • Parmesan cheese, for topping

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and mushrooms. Saute for 4 minutes.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Stir in the better than bouillon. 
  4. Sprinkle in the rice and lentils. Add in the carrot, Italian seasoning and a pinch of salt and pepper. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  6. Stir gently. Serve topped with a bit of parmesan cheese.
