Description

Seasoned ground beef with shells, corn and cheese made fast in the Instant Pot.  


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp cumin
  • 1 Tbsp chili powder
  • 1/4 tsp smoked paprika
  • Pinch of oregano
  • 2 cups beef broth
  • 8 ounces medium shells
  • 1 (24 oz) jar spaghetti sauce
  • 1 cup frozen sweet corn
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.
  2. Stir in the salt, pepper, cumin, chili powder, paprika and oregano. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  4. Sprinkle in the shells. Pour in the spaghetti sauce and then dump in the corn. Don’t stir.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  6. Stir in the cheese. Serve and enjoy!
