Description

Easy oven-baked meatloaf made with ground turkey (or chicken or beef), seasoned with garlic, Italian herbs and lots of Parmesan cheese.


Ingredients

  • 16 oz ground turkey, ground chicken or lean ground beef
  • 1/2 cup panko crumbs
  • 2/3 cup shredded parmesan cheese, divided
  • 1 Tbsp minced dry onion
  • 3 garlic cloves, minced
  • 1 egg
  • 1 Tbsp milk
  • 1 tsp dried parsley
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Instructions

  1. Heat oven to 350° F.
  2. In a mixing bowl add the meat, panko, half of the parmesan, onion, garlic, egg, milk, parsley, salt, pepper and Italian seasoning. Mix with hands until just combined. Try not to overmix. 
  3. Form into a loaf and place in a loaf pan (or you can just place on a sheet pan).
  4. Bake for 45 minutes, use a thermometer to check for doneness. It should be 165° F in the middle. If not, bake for 10-15 more minutes. (I did two mini meatloaves instead of one big one and it only took 30 minutes).
  5. Sprinkle the remaining parmesan on the top and put it under the broiler for a minute to melt and brown up.
  6. Let rest for 5 minutes. Slice and serve.
